Mission Style Burritos

Another batch of burritos for the freezer. They are just so handy to have. This one has rice and beans since I made a new batch of Rice for Burritos and the Freezer, found some refried beans in the scratch and dent bin, on my Shopping Time! And just made Beef & Chorizo Taco Mix. Mission style burritos this time.

Beef & Chorizo Taco Mix, Rice for Burritos and the Freezer, cheese & flour tortillas. This is just assembling what I already cooked.

Warm the tortillas over a burner. I like a bit of char on them, but make sure the exhaust fan is on if you go for the charred bits. You do need to heat them enough to make them pliable, either over a burner or in a dry pan. Lay them on a rack to assemble so the heat doesn’t sweat them and make them soggy.

Add beans, rice, and a scoop of the taco meat mix.

Roll up the bottom, tuck in the sides, and roll up completely. Lay seam side down on a sheet tray.

Finish rolling all the burritos then individually wrap and into the freezer.

Once completely frozen, label and pack in freezer bags.
