Chipotle Pork & Bacon

Loosely based on a Mexican barbacoa, slow braised pork with smoky sweet bacon, chipotles and bar-b-que sauce.

Breakfast = Breakfast Smoothees

Lunch = Egg Salad

Pork, bacon chunks, chipotles onion, garlic.
Take a thick slice of onion, halve it and lay it in the bottom of a small slow cooker.
Smash peel a couple garlic cloves. Lay the flat of the knife over them and give it a bit of a whack. The peels fall away and the clove opens up.
Trim the pork and bacon to roughly equal sized pieces.
Dust the meats with cumin, coriander, smoked paprika, salt & pepper.
Had 1/2 a jalapeno left, so I trimmed that up and tossed it in.
Break up the chipotles add to the onions, garlic & jalapenos.
Add the seasoned meats to the little slow cooker. Cook on low 6-8 hours.
Thaw and drain a portion of Easy Freezy Pinto Beans. Lightly mash with just a bit of butter. Traditional refried beans have lard.
Lay down a portion of Rice for Burritos and the Freezer
Top the beans with a bit of grated cheese to melt, top the rice with 1/2 the pork.
Reserve the rest of the pork for another meal (link) pork taco pocket.
