Sweet Pepper Omelet

Sometimes it is about contrasts. Soft and savory omelet with crispy English muffins and sweet jam. Simple “brunchish” breakfast.

Egg, cheese, onion, sweet pepper.
Dice a bit of onion, clean and dice one mini-pepper.
Crack the egg into a small bowl fork whisk with a splash of milk.
Grate some colby-jack cheese. And off to the stove!
Melt a 1/2 tablespoon butter over medium low heat. Eggs like slow heat.
Sauté the veggies just to soften.
Reduce heat to low and slowly lift the cooked eggs from the bottom, letting the uncooked run underneath.
Once the eggs are nearly set, top with finely grated cheese and let melt.
Toast an English muffin slather with butter and jam.
Plate the omelet salt & pepper to taste.
Give it a fold if ya feeling fancy!
