When you think Hawaii you think Poke, you think sushi, you think spam, you think kalua pork, you think pineapple. One of the most beloved Hawaiian comfort foods is loco moco. A burger patty, over white rice, topped with a runny yolk egg and rich brown gravy .. for me a mushroom gravy.
In a small bowl mix the 1/2 ramen packet, Worcestershire sauce, and soy sauce. Umami bomb.
Form 1/4 lb thawed ground beef into a patty, cook over medium-high to get good color. Remove the burger patty.
Sautee the mushrooms and onion in the same pan, loosening up any browned bits from the bottom of the pan. Get some good color on the mushrooms, and reduce any moisture from them.
Mix 1/2 tablespoon cornstarch into the umami bomb, stir well to dissolve.
Pour the cornstarch umami over the mushrooms and onion mixture. Stir and cook to thicken.
in a speerate pan gently cook a sunny side up, or over easy egg. You need the yolk runny.
Plate rice, burger, egg.
Then smother it all in the mushroom gravy.
Then pop that yolk, and let it all run out into the gravy.
I have always cooked, I was that person who could make a meal from an empty fridge. I have lived alone and with large and small families, I have cooked for camps on wood stoves, and in professional kitchens. I have lived and worked all over the west from Montana, to Seattle to Arizona to San Diego. I have traveled, maybe not 'all over the world', yet, and have collected tastes recipes and techniques everywhere, and every one I meet.
