Steak Fajita Tacos

Thaw a Mexican marinated steak the night before. If you forget you can always freezer cut it into strips.

Breakfast was Pina Colada Overnight Oats

Lunch was Dal Style Lentils & Chicken

Pat the steak dry. Notice the direction of the striations of the mean. We will want to cut across those to keep it tender.
A kinda thick slice of onion, a handful of pepper slices right from the freezer, and a clove of garlic – or two if small.
The last of the cherry tomatoes are getting a bit sad. Even though they are shriveled they will plump and burst when seared with corn for a side dish.
Once you flip the steak add the onions and peppers to the same pan.
Add some frozen corn to the pan with the tomatoes.
Season with salt, pepper, cumin, coriander.
Char some corn tortillas.
Slice the steak against the grain. Nice char, pink in the middle.
Load the tortillas with steak and the peppers and onions.
And a drizzle of the home made chipotle crema.
