Pina Colada Overnight Oats

A quick trip to the islands in a hearty breakfast perfect for warm mornings. Smooth and creamy and cool and sweet.

Dinner Pizza!

I had the reserved juice from the pineapple I used for the (link) pork belly tacos. So I added that to a 1 cup measure.
I drained a second pineapple cup into the measure.
Add coconut milk to make one cup.
I use the fruit cup to measure out a portion of sweetened coconut.
Stir together the coconut, pineapple and oats.
Stir in 1/2 cup yogurt.
Mix well.
Divide evenly into three containers.
Into the fridge overnight, and up to 5 days.
Yum! Pina Colada oats.
