Pizza!

We all need a pizza night! Sometimes it is easy to just order takeout, but some people don’t live in the delivery zone. Normally I will have homemade dough in the freezer, but in a pinch a pita will do. Luckily I had some pitas in the office stash so we had not one but four pizza nights.

Peperoni is the quintessential pizza topping, and being a cured meat it has a long shelf life. It is another product that brings a huge amount of flavor. Moderation is key – consider it more of a seasoning

Breakfast was – Granola ways.

Lunch was – Chicken Salad Sandwiches

I make a little garlic flavored olive oil by just simmering some sliced garlic in oil.
Spread the sauce on the crust.
Slice some black olives.
Shredded mozzarella over the sauce.
Top with the pepperoni and olives.
Bit more mozz.
Get melty.
Top with extra parmesan and fresh parsley or basil.
Have with a simple salad. But you don’t need to see that .. you have Pizza!

I have lived alone and with large and small families, I have cooked for camps on wood stoves, and in professional kitchens. I have lived and worked all over the west from Montana, to Seattle to Arizona to San Diego.
