Chicken Salad Sandwiches

I cooked up a couple extra chicken thighs to have some chicken salad for lunches. (link)

Bone the chicken thighs and chop the meat, add a celery stalk, pickles, onions, lemon pepper, dill, mayo, mustard, celery salt and pepper.
About 1/3 cup salad between two slices of bread.
Spread evenly.
Add some apples.
Or grilled. Start by buttering two slices of bread.
Place bread butter side down in a pan over medium low heat.
Once the cheese starts to meat.
Top with chicken salad.
Top with the other slice of bread. Flip several times cooking slowly until golden.
Serve with some apples.
Or a salad.
