Mexican Pan Frittata

Call it a pan omelet or a frittata all the flavors of an omelet without the fussing and folding.

Handful of bag-o-bacon, an egg, a splash of milk, the sale salsa fresca, cilantro, pepper-jack cheese. I start the bacon cooking with a few tablespoons of the salsa, in my 6 inch cast iron pan – pre-heat the broiler of the oven.
Cook for just a few minutes on the stovetop then transfer to the center rack of the oven.
