Pancakes with Berries

Getting low on toaster pancakes, so time to replenish. Bit different recipe which uses yogurt rather than powdered buttermilk. Also just to punch it up a bit, making some warm berry syrup from frozen berries.

Start with a cup of berries.
Place them over low heat with a dollop of honey.
Whisk in 1 cup milk.
And one egg.
Add in 1/4 cup yogurt.
Mix to combine. Do not over mix. Just until it all comes together.
Heat a griddle pan or heavy skillet to medium high heat.
I use the 1/4 cup measure to scoop out portions of batter.
Cook until bubbles open on top
Flip when golden brown.
Continue cooking until all the batter is used. 10-12 pancakes.
Plate the last two pancakes from the griddle. Add a schmear of butter.
Top with about half the berries.
Mmmmm warm berries over pancakes.
