Chicken Thigh & Shortcake

I don’t often make desserts, not a huge sweets fan. Occasionally though a simple sweet outside of breakfast hits the spot. When I do plan on dessert I will make a simple meal rather than add a second meal to my meal.

Lunch was BLT

Preheat the oven to 450 and gather some seasonings.
Season up a thawed chicken thigh, and place it on a rack in the preheated oven.
Form the biscuits however you like, I just mooshed it into a rectangle then halved that.
Place the biscuits on the rack with the chicken thigh in the last 15 minutes of cooking.
Flakey!!
Cook some broccoli. Simple, complete dinner, protein, starch veg.
Now for the fun part. Get the berry mix left from Pancakes with Berries. Heat it up a minute or so in the micro.
Get 1/4 cup yogurt and whip it with some sugar until light and frothy.
Place the second biscuit on the warm berries.
Top with the sweet frothy yogurt.
