Burrito & salad dressing

I usually have some sort of freezer burritos – ok, several sorts. Breakfast and lunch. They are great grab and go’s, take to works, or for when you just don’t have time to stop and cook something. You can toss them in the micro, or crisp them in the oven.

Since I was doing burrito prep of course I had to have one for lunch. Meat & Bean Burritos.

I whipped up a quick salad dressing with just mayo and store bought salsa
Put a couple spoons full of salsa in a small resealable container.
Add about the same amount of mayo.
And give it a mix. Quick easy salsa salad dressing. Salad dressings are hugely overrated in the market. Most are some combination of oil and vinegar, two of the least expensive items you can buy. All are some combination of acid and fat. Here the salsa provides the acid and the mayo the fat. This will keep a very loong time in the fridge.
Burrito, salad.
Salad dressing and salsa … lunch!
Bonus, you have some salad dressing in the fridge for later use.
