Italian Tomato Soup and Grill Mozella

A taste of childhood, who doesn’t love tomato soup and grilled cheese. I had 1/2 can of tomatoes left over from Bacon Burger Mac-N-Cheese in the fridge and on a cool day who could say no to some hot creamy soup.

Left over canned tomatoes, a couple chicken stock cubes, two slices of bread and mozzarella.
Puree the tomatoes with the stick blender or any other whirring machine you may have.
Add the tomatoes, stock cubes, and a couple shakes of each spice to a pot, heat over medium low heat while you make the sandwich.
Toast slowly on each side flipping several times to melt the cheese evenly.
Gooey melty goodness … pardon me while I dunk!

I have always cooked, I was that person who could make a meal from an empty fridge. I have lived alone and with large and small families, I have cooked for camps on wood stoves, and in professional kitchens. I have lived and worked all over the west from Montana, to Seattle to Arizona to San Diego. I have traveled, maybe not 'all over the world', yet, and have collected tastes recipes and techniques everywhere, and every one I meet.
