Applesauce oats

Sometimes you find a little treasure you didn’t expect. I found an apple from my first shop. The second shop I bought granny smith apples, and the first one I bought gala apples. Shows how long some things will last if properly stored. It is a bit sad, but not hopeless.

Sad little apple. Bit wrinkled but no bad spots or rot. Skin intact protecting it.
Apples love warm spices like cinnamon, cloves, and yes, pumpkin spices.
Halve the apple.
Then peel, core, and roughly chop the apple.
Place the chopped apple in a small pot.
Turn heat to medium low.
Cover and simmer 25-30 minutes.
The apples will begin to break down. I like some chunks rather than total mush.
Return the applesauce (Yes you just made applesauce!) to the pan, add 1/2 cup rolled oats.
Stir the oats into the applesauce.
Chop a handful of walnuts for some crunch.
Stir occasionally until the oats are soft – about 5 minutes.
Put the oats into a bowl.
Top with a dollop of yogurt for some creaminess.
And the chopped walnuts for crunch.

I have always cooked, I was that person who could make a meal from an empty fridge. I have lived alone and with large and small families, I have cooked for camps on wood stoves, and in professional kitchens. I have lived and worked all over the west from Montana, to Seattle to Arizona to San Diego. I have traveled, maybe not 'all over the world', yet, and have collected tastes recipes and techniques everywhere, and every one I meet.
