Potato Salad

Potato salad is another classic. By itself pretty much a complete meal, maybe add some fruit. Great for warmer days or days you don’t have access to a micro at work.

Any classic potato salad is eggs, mayo, onion, celery, pickles, vinegar, mustard …. wait a minute, that sounds a lot like the same ingredients in L17 – Egg salad, right?

Some of my potatoes were getting a bit sad. They usually last a long time, but I think they got a bit warm on the counter during the move. So time to use them up.
Peel the potatoes.
Chop into 1/4 inch bits.
Place potatoes in a pot of cold salted water.
Bring to a boil over medium heat.
Cook until potatoes are just soft when pierced with a knife.
Drain and cool.
Add two tablespoons vinegar to the egg salad.
Pour over the potatoes and mix thoroughly.
Kinda a cheater potato salad, but – lunch for the next two days.
