Red Pepper Rice Go Lunch

We all need some grab and go lunches in the freezer, it is nice to know what is in them. It is just as easy to make a batch of something and freeze it in serving sizes. Red pepper sauce and pesto’s are great ways to store peppers and herbs for later use. Simple, nutritious, flavorful.

Add some rice or pasta with a salad or fruit for a quick freezer lunch, or over chicken or chops for a complete dinner.

Grab one pack of freezer rice (link) and a red pepper sauce (link). Put together a simple salad with dressing on the side.
Off to work.
By lunch time the rice and sauce will be partially thawed. Place rice into the container.
Top with roasted red pepper sauce. Microwave at 30 second intervals, stirring between.
The rice will absorb the sauce and just become a beautiful saucy dish. Top with parm if desired. Simple salad on the side.
How pretty is that, and you know everything that is in it because you made it yourself. Ready to go from the freezer whenever you need it, this and pesto are some easy go to’s for lunches.
