Shaksuka

Runny egg baked in a tomato sauce. Is it breakfast? Nope – Dinner

Breakfast I had Granola ways and lunch (chicken soup)

Some bag-o-bacon, a mini pepper, bit of onion, chunky marinara, English muffin and an egg.
Preheat oven to 350.
Chop the mini pepper, and a slice of onion.
Micro the marinara for just a few seconds, just to soften. We’re going to spice it up a bit with some spicy paprika, cumin and coriander.
Saute the bacon, peppers, and onion til the bacon is cooked through and the veggies are soft.
Add the marinara to the pan, and spices.
Make a well in the center of the pan with the back of your spoon.
Crack an egg into the well.
Put the pan into a 350 oven for 10-12 minutes depending on how done you like your egg.
Sprinkle with a bit of fresh parm.
Gotta have some toast to sop up the egg and sauce.
