Mediterranean Drumsticks

Adding Mediterranean spices in a marinade for the humble drumstick takes it to a whole other level.

Seems like a lot of ingredients, but mostly spices, chicken legs, lemon and onion. Place a resealable bag over a mason jar or measuring cup to hold it while you fill with the marinade.
Zest a lemon into the bag.
Add a couple tablespoons olive oil and let sit for about 20 minutes.
Put a small amount of olive oil to a baking dish.
Arrange the chicken drumsticks over the onions and surround with lemon slices. Bake uncovered at 375 for 40-45 minutes.
When the chicken is done heat some rice and cook some broccoli.
Serve the chicken along side the rice with all the collected juices over the rice.
All those spices and lemon brings huge flavor to the rice.

I have always cooked, I was that person who could make a meal from an empty fridge. I have lived alone and with large and small families, I have cooked for camps on wood stoves, and in professional kitchens. I have lived and worked all over the west from Montana, to Seattle to Arizona to San Diego. I have traveled, maybe not 'all over the world', yet, and have collected tastes recipes and techniques everywhere, and every one I meet.
