Taco Meat Taco Pocket

I have been playing with the taco pockets, or queso pockets, whatever we are calling them. I wanted to test one in the toaster oven to see if this could become a work meal. It turned out just ok. It would work, but cooking them slowly in a bit of oil creates a crispier outside. Still yummy with the cheese going all the way to the bottom, and no leakage. Think I will stick to pan fried.

Breakfast = Breakfast Smoothees

Lunch = Corned Beef Soda Bread Sandwich

Take a large burrito sized flour tortilla. Pre-fold it into quarters.
Cut one fold so you end up with a pac-man slit in the tortilla exactly to the center.
Place two piles of cheese in the top two quarters, then fold the bottom one over dry. Fold over the cheese corners to form a cone.
This one I baked in the toaster oven just as a test, as you can see the tortilla got a little dark before the cheese melted. Still melty good though.
Heated some Beef & Chorizo Taco Mix and filled the dry center pocket.
Topped with some salsa and a dollop of yogurt-as-sour cream.
Tasty and cheesy to the last bite!
