Chicken Pesto Rice

In all my busy prepping I nearly forgot about the rib flap meat from the 2 Chickens $10 – 30 servings. Came across it in the fridge, so decided to whip up a quick dinner with it.

The flap meat, a bit of pesto, and a Rice for Burritos and the Freezer. All the flavor is right there in that beautiful pesto.
Give the flap meat a quick chop. Into a medium hot pan with just a bit of olive oil to brown.
Reduce heat to medium low. Empty the rest of the pesto into the pan. Micro the rice for just 30 seconds to loosen. It can still be semi-frozen. Stir it all together and heat through.
A nice fresh salad is all you need.
Chicken and rice in a great sauce with a fresh salad. Not going to get that from a box.
