Pork Prep

I’m always on the lookout for deals you won’t find in the sales flyers. These are usually called ‘managers specials’. There are always some in the meat and produce aisles, and some stores have a “scratch and dent” area for canned goods. Often I will build from those. They are the first places I check in the market, and I try to shop around them. Particularly after certain food related holidays you can find some great sales. Ham and eggs after Easter, corned beef after St Patty’s, Turkey parts after Thanksgiving and Christmas etc. Keeping those in mind as well as seasonal produce is great ways to stretch your budget.

I found this pork on sale, it is just chopped pork shoulder that you would use for a chili or posole, but hey, in the end it is just lovely chunks of pork. Great for stirfrys, pork & beans or anything I want.

Nearly 2 pounds of diced pork for $4.90. Not bad.
Into snack size, then into freezer bag. Label and freeze.
