Breakfast Banana Nut Muffins

I love banana bread these are just individual freezer servings of banana bread. Pop one in the microwave with a damp towel or cup of water and they come out as though fresh from the oven. You really need the dampness in the microwave to may pastries and other ‘bready’ items come out steamy and moist rather than dry and crusty. Makes a world of difference.

Start with the usual baking basics – flour, sugar, baking powder, salt, butter, eggs, vanilla. And of course bananas and nuts. Preheat oven to 375.
Stir everything together just to combine.
Butter and flour muffin cups then fill cups 3/4 full.
Bake in preheated 375 oven about 20 minutes or until a toothpick, or knife comes out clean when inserted into the center.
Cool completely on a wire rack. Then wrap individually in plastic wrap.
Label and into the freezer for breakfasts or treats all month long. I got 18 muffins from this batch.
