Warm Spinach Salad

Bacon, spinach, vinegar, feta and yum!

Classic warm spinach salad is classic for a reason. It may come and go in favor with socials but once you put it together you will find yourself revisiting this classic every time you have fresh spinach in the house. Because you always have bacon!

Bag-o-bacon from the freezer, spinach, a green onion, feta cheese and vinegar.
Give the bacon a quick chop.
Slice the green onion on the bias. White and light green parts.
Rinse the spinach and pat dry.
Top the spinach with a handful of feta.
Meanwhile cook the bacon with some black pepper.
Cook the bacon until crisp, leaving most of the fat in the pan, that will be the “oil” part of the dressing.
I had some red wine vinegar that I used for the, but apple cider would work great with the bacon too.
Deglaze the pan with the vinegar, picking up all the fond from the bottom of the pan.
Drizzle the hot fat and vinegar dressing over the spinach and feta.
Sprinkle with green onion.
