Chicken enchilada

Freezer is getting a bit low, so using up what I have. Still have some green chicken enchilada’s – so heating them up for L32, L36 as well as D29

Vary the sides and mix it up a bit. You can either micro them, or bake them.

Unwrap the enchiladas from the plastic wrap and foil.
Cover with the plastic wrap. Micro for 1-2 minutes depending on your micro, until heated.
Add a salad.

OR

Take out a rice pack, and micro 30 seconds to loosen.
Put the rice in a ramekin, and add some mild green chili salsa.
Cover both the ramekin with the rice and the enchiladas with plastic wrap. Micro 1-2 minutes until heated through.
Put the rice onto the plate, and top everything with shredded pepper jack.
Micro another 30 seconds to melt cheese.
