Bacon Avocado Toast

Of course avocado toast, and with bacon. Because when you have half an avocado left, it just needs bacon.

Bacon straight from the freezer. Give it a bit of a chop if needed.
Into a cold pan to start crisping.
English muffin from the freezer.
Split with a knife, and pop in the toaster.
The half of avocado left from last night tacos (link).
All the tricks to keep an avocado from browning – I put it in a small bowl, flat side down, and add enough water to cover any exposed flesh. It is air that browns an avocado.
Score the avocado with a knife.
Mash with a fork right in the skin.
Once the bacon is crisp, drain on a paper towel.
Spread mashed avocado on the toasted English muffin.
Top with crumbled bacon.
Sprinkle with smoked paprika.
