Tostada

When I’m prepping I will often get the bits an put them together for another meal. I had all the parts for Taco meat – because Tuesday. and Meat & Bean Burritos so I crisped up a corn tortilla and assembled a tostada.

Heat a layer of oil in my favorite pan, my little 8″ cast iron.
Once the oil is hot place a corn tortilla into the hot oil, it should sizzle.
Crisp on one side. Then flip with tongs.
Once crisped on both sides. Remove from pan.
Drain on paper towel to remove excess oil.
Place on plate, top with a smear of refried beans, some taco meat, cheese.
And salsa. Add a handful of salad on the side.

I have always cooked, I was that person who could make a meal from an empty fridge. I have lived alone and with large and small families, I have cooked for camps on wood stoves, and in professional kitchens.
