Freezer Pancakes

Pancakes on a Wednesday? Sure why not, not working so every day is the weekend. Everyone love those toaster waffles full of who knows what. Why not make your own toaster pancakes with just plain old ingredients and have them in the freezer to pop in the toaster when ever you like.

When I get a pancake craving, it is just as easy to make a full batch and then have some in the freezer. It uses one egg so might as well right. Another breakfast in your freezer for next to nothing to make and use. Not preservatives or unpronounceable ingredients, no mountain of packaging.

Melt 2 tablespoons of butter, either on the stove or in the microwave.

If you have an electric range usually the back right burner under the element will look like this. It is a vent from the oven and if the oven is on this will be quite warm. Good for holding dishes, and melting butter. If the oven is on, just set the pan over that burner and it will hold without turning the burner on.

Anyway – back to the pancakes.

Set your large wire sieve over the big bowl. Into in put 1 1/2 cups flour.
Add two tablespoons buttermilk powder.
Add one tablespoon white sugar.
3 1/2 teaspoons baking powder and one teaspoon salt
Sift dry ingredients into the bowl
Make a little well in the flour.
Crack one egg into a one cup measure – we will use it later so no need to dirty a bowl.
Use a fork to break up the egg.
Pour the egg into the well.
Add 1 Cup water
And 1/4 cup milk
And your 3 tablespoons melted and cooled butter. I used my tiny little cast iron over a burner, but you could also use the microwave and a small bowl.
Mix gently to combine. You don’t want to over-mix, it will develop too much gluten and make the pancakes tough.

Use a 1/4 cup measure to scoop batter onto an oiled griddle or pan preheated to medium.
Wait for little dry bubbles to form and pop.
Flip pancakes when golden brown.
Continue cooking all the pancakes. Place them on a plate or wire rack to cool.
Enjoy the last two off the griddle with some butter, maple syrup, and fruit.
Once they are completely cool.
Wrap pancakes in plastic wrap with a layer between so they won’t stick.
Pack into freezer bag, and into the freezer.

Four more grab and go breakfasts. Just unwrap and pop into the toaster from frozen.
