Roasted pepper sauce

Most of the prepping happens when you first bring the groceries home. But, when they start getting towards the end you come to some ‘use it or lose it’ moments. I noticed when I was making D31 – Sloppy Joes that my mini pepper were getting a bit sad, and knowing I had some sad carrots too, I decided to whip up a batch of roasted red pepper sauce.

Clean the peppers and peel and chop carrots.
Place on a sheet pan and drizzle with olive oil.
Roast in 350 oven until carrots are soft and peppers begin to brown.
Walnuts, olive oil, salt, lemon, capers.
Add all the peppers and carrots to the blender container – stick blender, mini blender, food processor – whatever whirring thing you may have.
Add 1/4 cup olive oil.
And 1/4 cup walnuts.
Juice of 1/2 a lemon and two cloves of fresh garlic.
Blend it all together. Taste.
Few capers for some more brininess – it was still a bit sweet.
