Sloppy Joes

Flashback to childhood. Basically BBQ beef on a bun – or an English muffin.

Lunch was go Red Beans & Rice Lunches

1/4 lb ground meat, a mini pepper, bit of onion, an English muffin
and the BBQ sauce I mad earlier for D16 – BBQ Chicken & JoJo’s.
Clean and chop the pepper.
Cut a wedge from the onion.
Chop the onion, and what the heck, grab a garlic clove, and chop that too.
A bit of oil, and a bit of butter in the saute pan.
Cook the veg for a few minutes until fragrant and beginning to soften.
Add the ground meat to the pan.
Break up the meat as it browns.
Add a 1/4 cup BBQ sauce to the pan.
Let it all simmer together.
Toast the English muffin crispy.
Top with the meat sauce and some slaw on the side.

I have always cooked, I was that person who could make a meal from an empty fridge. I have lived alone and with large and small families, I have cooked for camps on wood stoves, and in professional kitchens. I have lived and worked all over the west from Montana, to Seattle to Arizona to San Diego.
