Lemon pepper wings

Breakfast I had one more Maple Brown Sugar Overnight Oats.

Who doesn’t love a good wing, they come with the chicken, they are fun to eat. Something about eating with your hands is satisfying in a primal sort of way. And hey, it’s just me so no one to care if I lick my fingers, right?

Preheat the oven to 350. Put two tablespoons of flour in a small bowl.
Add a teaspoon of lemon pepper.
Toss frozen cauliflower in the flower mixture.
Wait! what? Cauliflower?? YES. Put them on a rack in the preheated 350 oven.
Move the flour mixture to a large bowl – or you could have just started in the large bowl.
Add the zest of one lemon.
Toss the wings in the flour mixture.
Heat an inch of oil in the little cast iron pan, fry the wings until golden brown on one side.
Check the cauliflower, crusty edges and soft in the middle.
When the wings are golden and crispy.
Transfer to the big bowl
Give the butter mixture a good stir to evenly distribute the flavors.
Toss the wings in the lemon better.
Then toss the cauliflower.
A side of ranch and some cut veggies.
