Soft boiled egg

Boiled eggs are so versatile. I seem to go through stages where I always have them in the fridge, and other times I don’t. Summer I like to have them for a quick protein snack. A soft boiled egg is a luxurious yolky breakfast. When I am boiling up some eggs for egg salad, potato salad, or just to have on hand I do it in the morning a snag out one at 3 minutes for this little treat.

I’m making up some egg salad later, and some potato salad tomorrow, so the first step is to get some eggs on to boil. I put 7 eggs into a pot of cold salted water.
I need a bit more flavor so I’m crisping up some bacon.
And some green onion.
I crisped up the bacon and added the white and light green parts of the onions, reserving the green tops for a fresh garnish.
I toasted up my bread, lightly buttered it, and diced into croutons.
Put the croutons into a small bowl.
Once the eggs have come to a boil, time for 3 minutes, bring one out with a spoon and chill under cold running water for a couple minutes.
Tap the egg with the back of your spoon, and split in half.
Watch for shells.
Run your spoon around the inside of the shell scooping out the egg into the bowl.
Chop the eggs into the croutons – the yolk is usually more runny than this, but .. photos.
Top with crispy bacon and green onion.
