Pina colada oats

Weather is supposed to be warm the next few days so looking for cool sweet tropical breakfast. And need to use up some of the coconut milk from the chicken curry.

Enter pina colada overnight oats. Pineapple and coconut creamy goodness. B31-32-34

Oats, coconut milk, coconut, and two of the little pineapple cups.
Strain the pineapple into a measuring cup.
Add well stirred coconut milk to equal one cup liquid.
Add one cup water.
Add one fruit cup of sweetened coconut.
Stir in one cup oats.
Add in the pineapple chunks. Stir well.
Divide into three containers.
Cover and refrigerate overnight, or up to 5 days.
Leftover coconut milk? Freeze it!
Portion between two bags and freeze for future oats, curries, or smoothies.
Pina colada overnight oats. This one I like better cold straight from the fridge.
