Fauxmlet – like an omelet

I like omelets – or at least the idea of them. Eggs, with ‘stuff’ in them, smothered in melty cheese. The making of them for one, is temperamental, so I came up with a pretty good fake out rather than folding – which is difficult with just one egg, I pop it under the broiler for a few seconds just to melt the cheese. So turn the broiler on high before you get started and make sure you use an oven safe pan. All pans should be oven safe .. or cast iron – I love cast iron.

Get some bacon pieces, an egg, a slice of bread and a couple slices of cheese.
Crack the egg into a bowl.
Whisk the egg together with a little splash of milk salt and pepper.
Crisp the bacon over medium heat, almost smell it can’t you.
Turn off the heat and pour the egg mixture into the pan with the bacon.
Lift the cooked egg from the bottom, letting the uncooked egg flow underneath.
Lay the cheese over the top.
The egg will not be fully cooked at this point but will finish in the oven.
Pop the pan under the broiler for just a few minutes to melt the cheese.
Onto a plate with some toast!
