Bag-o-Bacon BLT

BLT is a classic for a reason. It is definitely a go-to for me when I need a quick and easy lunch. Crispy bacon, toasted bread, cool lettuce, sweet juicy tomatoes and creamy mayo – nothing wrong with that! The main problem with a standard BLT is the “B”! Strips of bacon in a big pan, then once they are crisp you put them on the sandwich, take a bite the bacon pulls out and you are left with nothing but a sad “LT” sandwich.

Enter “bag-o-bacon”. Having prechopped bacon in the freezer makes this much easier to both prepare, and to eat.

Some bag-o-bacon and bread – straight from the freezer is fine here, too. Lettuce mayo and tomatoes. I like a bit of black pepper also.
Meanwhile toast the bread.
Do the same with sliced cherry tomatoes.
Top with lettuce.
And bring it all together. Have an apple or some salad on the side. I go back to this classic a couple times a month usually.
