Cajun Hash

Think the flavors of gumbo without the hours of cooking or the heavy gravy.

Lunch was – BLT

A serving of sausage, and one of chicken, and a large potato. This will make enough for a lunch too.
Peel the potato.
Dice the potato and toss with oil to coat.
Cut some pepper slices into thirds and a stalk of celery. Toss with the potatoes.
Spice time, salt, pepper, paprika celery salt, garlic, cayenne, pepper flake.
Toss the spices with the potatoes and veggies.
Slice the sausage into rounds, and the chicken into bite size bits.
Split the has between a plate, and a container for a lunch. Side salad with ranch.
