Bacon Omelette

Having bag-o-bacon in the freezer is something I can no longer live without. To have bacon that you can just cook from frozen pre-chopped and ready to go is almost an instant meal – breakfast, lunch or dinner.

Handful of bacon from the freezer, toast from the freezer, cheese, egg, green onion and milk.
Chop the white part of the green onion, and the bacon into uniform pieces.
Crack the egg into a bowl, add a tablespoon of milk.
Whisk the egg and milk together with a fork until frothy.
Grate about 1/4 cup cheese, and slice the rest of the green onion for garnish. This little cutting board is great for moving items from prep area to the range.
Start the bacon in a cold pan, add just a touch of bacon fat if needed.
Slowly cook the bacon over med heat until cooked through and beginning to crisp.
When bacon is nearly done add in the white and light green parts of green onion.
Reduce heat to medium low, and gently add the egg.
Gently lift the cooked egg, letting the uncooked run underneath.
Once the egg is about half cooked, top with the cheese.
Pop it under the broiler just to melt the cheese.
Slide onto a plate and top with the green parts of the onion.
Toast and orange completes the meal.
