Roasted Red Pepper Chicken

When the produce starts to get a bit sad it is time to cook it up before you lose it completely. It is a good idea to regularly check on it to catch it before it goes completely sideways. Such was the case with my little peppers, I love them but wish they sold them in smaller amounts. I turned them into Roasted pepper sauce, and made some chicken and pasta with it.

Lunch was some Green chicken enchilada

Chicken breast fillet, 2 ounces angel hair, and some roasted red pepper sauce.
Oven at 350.
1/4 cup of the sauce into the bottom of a ramekin.
Nestle in the chicken.
Top with a bit more sauce.
Seal tightly with foil.
Bake covered 15 minutes.
Uncover and bake another 5 minutes.
Remove the chicken breast from the ramekin to a plate.
Grate some parm over.
Stir the sauce in the ramekin.
Take the angel hair directly from the pot into the sauce.
Toss the pasta with the sauce in the ramekin.
Add pasta water as needed to thin to a creamy consistency.
Enjoy with a simple salad.
