Ranch Chicken & Rice

Chicken and rice has so many possibilities. Both are a blank canvas for so many sauces and variations. One could literally eat it for weeks at a time and never repeat flavors. Here is another very American take.

Breakfast was Banana Nut Muffins and an orange.

I thawed a chicken thigh overnight in the fridge, then pat dry.
Preheat oven to 400.
Loosen the rice in the micro for 10 seconds, then place in an oven safe pan and sprinkle with ranch powder. Ranch – powder & dressing
Sprinkle ranch powder over the broccoli as well.
Sprinkle the thigh with the seasoning blend – or salt, pepper, seasoned salt, garlic powder, and onion powder.
Arrange the chicken thigh, and the broccoli over the rice.
Cover tightly with foil and bake at 400 for 15 minutes covered.
Cut foil over the chicken and fold back. Bake another 20 minutes.
Uncover completely and top with mozzarella – bake 5 more minutes to melt cheese.
And dinner!
