Meatball marinara

Sometimes stuff happens. Had a work thing come up. I didn’t have anything prepared for lunch so had to grab something quick. With a well stocked freezer you can do that.

A bag of chunky marinara.
Put it in a container with four meatballs, and a pack of rice.
Added some Parmesan – these little containers that snap into the lid of the other containers are actually intended for salad and dressing – but hey this works too.
Come lunch time, I set the meatballs aside.
Mixed together the marinara and rice – who says you need spaghetti? . Microwaved it for a minute and stirred well.
Added the meatballs and microwaved for another minute or so. Topped with the parm.
And done.

I have always cooked, I was that person who could make a meal from an empty fridge. I have lived alone and with large and small families, I have cooked for camps on wood stoves, and in professional kitchens. I have lived and worked all over the west from Montana, to Seattle to Arizona to San Diego. I have traveled, maybe not 'all over the world', yet, and have collected tastes recipes and techniques everywhere, and every one I meet.
